Grandma’s homemade cinnamon buns are something I look forward to each time we visit. Naturally I needed to ask for her recipe and share it with you guys so that you can experience them for yourselves ;). These cinnamon buns are filled with gooey- melt in your mouth cinnamon sugar, shaped into pinwheels, and topped with homemade cream cheese icing and a glaze. I hope you guys enjoy these as much as I do!
Info and tips
This section is going to be a little longer than usual. Any type of bread making is usually a little more technical. Many of the ingredients listed will require you to eyeball or feel what is right. I’ve tried by best to write out approximate measurements, as my grandma doesn’t measure (that’s how you know recipes are good lol), but go with your gut on this one. Experiment and have fun, each time you practice you’ll only get better!
For the dough, feel free to use the recipe I’ve included or use your own favourite dough recipe. Either will work fine. When making the yeast mixture it is important to use warm water, not hot. I wrote 10-12 cups of flour, however this is a very rough guideline. I’d advise to just keep adding until the dough is no longer sticky, kneading as you go. Another tip for the dough, is to use a bit of oil towards the end of kneading. This helps avoid using too much flour and drying out the dough. When letting the dough rise, place in a slightly warm oven with a towel on top.
When making the cinnamon buns add as much brown sugar and cinnamon as you’d like. The more the better! Once the buns are formed, let rise once more on the baking sheet before putting them in the oven. Always let cool down before icing, otherwise it’ll melt off.

- 1 cup warm water
- 2 tsp sugar
- 2 tbsp yeast
- 1/2 cup white sugar
- 1/3 cup shortening
- 1 tbsp vinegar
- 1 tbsp salt
- 4 1/2 cups water
- 10-12 cups flour

- 1 cup butter
- brown sugar
- cinnamon
Instructions
Dough
- Mix the yeast with warm water and sugar. Let rise for roughly ten minutes in a warm place.
- In a large bowl, add in sugar, shortening, vinegar, salt, and warm water and mix.
- Add in the yeast mixture and mix together. Add in 2 cups of flour at a time until the dough can be kneaded.
- Remove the dough and knead for 5-8 minutes, adding more flour as needed.
- Place dough back in bowl and let rise twice and punch down.
Cinnamon Buns
- Split dough in half and roll out into desired thickness shaping into two rectangles.
- Spread on softened butter (not melted) to the dough.
- Add brown sugar and cinnamon until dough is covered.
- Roll up tightly and pinch closed. cut into 1 inch pinwheels and place on a greased sheet. Let rise once more before baking at 350 for 30-35 minutes. Line the pan with tin foil to avoid any drippings.
- Spread on cream cheese or a glaze and enjoy!
