Galentine’s pretty pink pasta is the perfect recipe to celebrate you and your girls. This recipe features heart shaped noodles in a vibrant pink sauce using roasted beets, creamy feta, and aromatics.

Info and tips galentine’s pretty pink pasta

In order to make the sauce vibrant pink we are using beets. Beets naturally have a gorgeous deep red colour, and by blending it with some heavy cream and feta we get a beautiful hot pink colour. I prefer to roast my beets quartered with the skin on until fork tender. You can also boil them if you prefer. You can peel the skin before or after cooking, although peeling after is easier.

I used heart shaped pasta from Barilla. I believe it is only available for a limited time around Valentine’s Day so get it while you can for the perfect addition to your dinner parties! I’ll include a link below ๐Ÿ™‚

Ingredients for galentine’s pretty pink pasta

  • 2 roasted beets
  • 2 tbsp butter
  • 4 garlic cloves
  • 1 shallot
  • 1 cup heavy cream
  • 200g feta cheese
  • 3/4 cup chicken broth
  • 1 tbsp lemon juice
  • salt & pepper to taste
  • pinch of red pepper flakes
  • 1/4 tsp nutmeg
  • pasta of choice (about 350g)

Instructions

  1. Begin by quartering the beets and roasting at 400F for 30-45 minutes until fork tender with the skin facing down (so the beets don’t dry out). How long they take to reach fork tender depends on the size and heat of your oven. Peel off the skin once cool enough to handle.
  2. Meanwhile mince your garlic and shallot. Melt the butter in a small saucepan and add the minced garlic and shallot. Cook for 1-2 minutes on medium heat (do not burn) then set aside.
  3. Add the sautรฉed garlic and shallot to a blender along with the heavy cream, feta cheese, chicken broth, roasted peeled beets, and lemon juice. Blend until mixed. Don’t worry if it appears thick, once heated it will thin out.
  4. Add the blended sauce to a pan on low heat, season with salt & pepper, red pepper flakes, and nutmeg. Meanwhile cook your noodles in boiling salted water.
  5. Once pasta is al dente add to the sauce and mix together, if sauce needs more thinning add a splash of pasta water.
  6. Serve pasta with more feta and fresh mint on top and enjoy!
