Fluffy gingerbread pancakes are the perfect festive treat for the holidays. The pancakes are warm and fluffy, perfectly spiced with ginger and molasses, topped with a generous drizzle of syrup and a dusting of powdered sugar.
Info and tips for fluffy gingerbread pancakes
My tips for pancakes is to never overmix the batter. You want your pancakes to be fluffy, and overmixing can cause the pancakes to become rubbery and tough because it develops too much gluten. Adding baking soda and powder will also help create fluffy pancakes. This is because of a chemical reaction that causes carbon dioxide bubbles to form in the batter.
Because of the molasses, the pancakes have more sugar content than regular pancakes. I have found that these pancakes can burn much faster than normal. Keep your heat low and have a watchful eye as you cook them, flip as soon as the underside is cooked.

I used my Our Place Pan to fry the pancakes. So far I have been enjoying it, nothing sticks!
Ingredients for fluffy gingerbread pancakes
- 2 cups flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/2 cup molasses
- 1 & 3/4 cup milk
- 1/4 cup melted butter
- 2 tsp vanilla
- 1 egg
- fruit for garnish
- syrup for garnish
- powdered sugar for garnish
Instructions
- Begin by adding the flour, sugar, baking powder, baking soda, salt, ground ginger, cinnamon, nutmeg, and ground cloves to a bowl. Mix well with a whisk.
- Next add the molasses, milk, melted butter, vanilla, and egg to the same bowl. Mix well until just incorporated. There will be some lumps but this is okay.
- Use a large spoon to pour the batter into a well oiled pan, creating round pancakes. When little bubbles appear on the surface flip the pancake. Continue cooking for another couple minutes until the other side is cooked. Repeat until all the batter is used.
- Serve with fresh fruit, syrup, and powdered sugar. Enjoy!
