Info and tips for easy pretzel cheese dip

This is a very basic recipe that uses techniques like making a roux. The technique of making a roux involves combining a fat and flour together in order to thicken a sauce. Many recipes call for roux like my Creamy Baked Mac and Cheese and my Creamy Loaded Potato Soup, so it’s definitely a great skill to learn!

The regular ratio for a roux is 1:1, for this recipe we will use 1 tbsp of butter and 1 tbsp of flour. Make sure you are whisking the flour into the butter to form a thick paste. Cook for another 1-2 minutes when the paste begins to bubble to get rid of any flour taste. It’s good to note that the darker your roux, the less thickening power it has. Then you gradually add your liquid (in this case milk) to the roux while whisking, make sure there are no clumps.

Make sure that when you add the cheese the sauce isn’t boiling anymore and the heat is shut off. This will help prevent the sauce from splitting and becoming grainy.

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp Dijon mustard
  • salt & pepper to taste
  • 1/2 tsp chili powder

Instructions

  1. Melt the butter in a sauce pan on low.
  2. Once melted add in the flour and whisk until a thick paste forms. Continue cooking for 1-2 minutes until slightly golden.
  3. Gradually add in the milk bits at a time, whisking constantly until all the milk is used up. Make sure there are no lumps.
  4. Bring to a gentle boil and cook for a few minutes until it thickens.
  5. Shut off the heat and gradually add the shredded cheddar cheese, whisking again.
  6. Add the Dijon mustard and listed seasonings. Taste test and adjust.
  7. Serve with my Homemade Soft Pretzels and enjoy!
