Cheesecake stuffed baked apples are the dreamiest fall dessert. This recipe features soft baked apples stuffed with cheesecake and a buttery graham cracker oat crumble.

Info and tips for cheesecake stuffed baked apples

Don’t let the look of this recipe deter you!! It is actually quite simple to make with minimal ingredients. To hollow out the apples nicely I like to use a small cookie scoop. Carefully use it to dig out the flesh of the apple, making sure not to get to close to the bottom or edges (you still want a little bit of fruit left inside). You can use the leftover apple fruit to put into the cheesecake filling, save it for applesauce or apple butter, turn it into apple crisp, or just eat it lol… lots of options.

I used honey crisp and granny smith apples for this recipe. They have a nice crisp tart flavour and hold up well in the oven. Avoid using apples like Red Delicious or Gala. These apples have very soft flesh that will not hold up well after baking.

Equipment

I use a Cookie Scoop to help hollow out the apples.

Ingredients for cheesecake stuffed baked apples

  • 6 apples (honey crisp or granny smith)
  • 1 block (250g) cream cheese
  • 1 egg
  • 1/3 cup brown sugar
  • 2 tsp vanilla
  • tsp cinnamon
  • tsp nutmeg
  • 1/2 cup graham cracker crumbs
  • 1/4 cup rolled oats
  • 3 tbsp melted butter
  • caramel sauce for topping

Instructions

  1. Preheat oven to 350 F.
  2. Begin by creaming together the cream cheese, egg, brown sugar, vanilla, cinnamon, and nutmeg with a hand mixer in a bowl. Continue mixing until there are no lumps and place in a Ziploc bag or piping bag.
  3. Mix the graham cracker crumbs, rolled oats, and, melted butter together to make the crumble.
  4. Cut off the tops of each apple and hollow out the middle with a small cookie scoop. Add a spoonful of graham crumble to the bottom of each apple, pipe in the cheesecake filling, and sprinkle the remaining graham crumble on top.
  5. Bake for 30-35 minutes until apples are soft and golden. Serve with a drizzle of caramel and enjoy!
