Brown butter chocolate chip cookies are so much better than regular chocolate chip cookies. They have perfectly crispy, crinkled edges, with nutty notes and a warm chewy center.

Info and tips for brown butter chocolate chip cookies

Brown butter is very special. The process of making brown butter involves melting butter until the milk solids caramelize, giving a golden colour and nutty flavour. It adds an intricate layer of flavour to recipes without adding any extra ingredients. Make sure you are stirring frequently to ensure the butter cooks evenly. Using a light coloured pan also helps you more accurately see when the butter is turning brown. As soon as you see that golden colour it’s important to take the butter off the heat, as it can go from golden to burnt very quick.

When you add the dry ingredients and chocolate, only mix until just combined. If you overmix cookie dough they can become tough, dense, or flat. Chilling the dough will help the flavours develop even more and help the cookies spread less.

Ingredients for brown butter chocolate chip cookies

  • 1 cup unsalted butter
  • 1 1/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 cups AP flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 225g semi-sweet bakers chocolate

Instructions

  1. First begin by browning the butter. Add the butter to a pan on medium heat and stir frequently. Butter will begin to foam and turn brown after a few minutes. Once it smells nutty and has a brown colour immediately remove it from the heat so it doesn’t burn. Let cool slightly for about ten minutes.
  2. Next add the cooled brown butter to a bowl. Add the white sugar and brown sugar to the butter and whisk. Next add in the eggs and vanilla and mix again.
  3. Ina separate bowl mix the flour, baking soda, baking powder, and salt together.
  4. Fold the dry ingredients into the wet, then add the chocolate (chopped chocolate chunks or chocolate chips). Don’t over mix.
  5. Cover and chill the dough for 30 minutes.
  6. Preheat your oven to 350 F.
  7. Use a cookie scoop to make small cookie balls. Place on a lined cookie sheet with a few inches between to allow for spreading. Bake for 9-10 minutes for smaller cookies or 10-12 for slightly bigger cookies.
  8. Sprinkle with some flakey salt immediately out of the oven if desired. Let cool on the baking sheet before removing to a wire rack to cool completely. Enjoy!
