Gingersnap Eggnog Cheesecake Bars 🍪🥛☃️

This is my official recipe entry for the #BecelBakeOff competition of 2024! I’m competing against 3 other incredible bakers, so make sure to like and comment to help vote for my recipe to win. 😊

Total time: 1 hour + 3-4 hours chill time
Servings: 9 squares

Ingredients:
1 ½ cups gingersnap cookie crumbs
½ cup melted Dairy Free Becel Plant Butter - Salted Sticks
2 softened cream cheese blocks (250g each)
¾ cup sugar
2 tbsp flour
½ cup eggnog
2 tsp vanilla
½ tsp nutmeg
2 eggs
whipped cream (for garnish)
raspberries (for garnish)
thyme (for garnish)
powdered sugar (for garnish)

Instructions
1. Begin by finely blending the gingersnap cookies in a food processor.
2. Add the cookie crumbs to a bowl with the melted Dairy Free Becel Plant Butter. Mix well and press into an 8x8 baking pan.
3. Next add the cream cheese, sugar, and flour to another bowl. Use a hand mixer to blend for 1-2 minutes until light and fluffy. Then add the eggnog, vanilla, and nutmeg. Blend again until smooth.
4. Mix in the eggs one at a time. Don’t over mix. Pour the cheesecake mixture over top of the gingersnap crust.
5. Bake in the oven at 350F for 30-40 minutes with a tray filled with water on the rack below. This will help steam the cheesecake.
6. Remove from the oven and let cool on the counter for 1 hour before placing in the fridge for 3-4 hours or overnight.
7. Garnish with whip cream, raspberries, thyme, and powdered sugar if desired and enjoy!

Crock-Pot Hot Chocolate Bar 🍫☕️

This is a super fun and easy way to host for the holidays! The hot chocolate is rich and creamy all made in the @crockpot 6-Quart Cook & Carry Slow Cooker. ☃️

Ingredients
Hot chocolate
• 6 cups milk
• 2 cups heavy cream
• ½ cup sugar
• ¼ cup cocoa
• 2 tsp vanilla
• 200g chopped dark chocolate
• 200g chopped milk chocolate

Toppings
• Mini marshmallows
• Whipped cream
• Candy canes
• Toffee bits
• Oreos
• Cinnamon sticks

Instructions
1. Begin by combining all ingredients in your crockpot. Stir and set on low for two hours. Mix occasionally to make sure the chocolate is melting evenly.
2. Meanwhile, set up your topping bar. You can use any toppings you dream up!
3. Pour hot chocolate into your festive mugs and top away!
