Creamy Tortellini Soup

Creamy tortellini soup is a favourite of mine. I love this soup so much, it has the perfect balance of cream, acidity and spice. This soup is filling and heartwarming, with italian flavourings such as tomato, basil, oregano, and spicy sausage.

Info and tips

This is a one pot recipe. Make sure you peel the outer casing off the sausages and brown them first before starting the rest of the soup. If you don’t want as much heat in your soup don’t use the spicy italian sausages, most times there is also a basil herb option which would work well in this soup.

Cook your tortellini a couple minutes less than the package instructions. They will finish cooking after you add the cream in. I find tortellini absorbs a lot of liquid so add more broth as needed.

It’s important to add the seasonings, parm, and spinach at the very end, don’t boil or overcook.

Also use fresh basil and oregano in the soup, it makes such a flavour difference!

Ingredients

  • 4 spicy italian sausages (400g)
  • 1 white onion
  • 4 garlic cloves
  • 1.5 cup crushed tomatoes
  • 2 heaping tbsp tomato paste
  • small handful fresh basil
  • small handful fresh oregano
  • 3 cups chicken broth
  • 4 cups tortellini
  • 1 cup heavy cream
  • 2 handful spinach
  • 1/2 cup parmesan
  • salt & pepper to taste
  • tsp garlic powder
  • tsp onion powder
  • red pepper flakes to your spice preference

Instructions

  1. Begin by mincing your garlic and onion and set aside. Remove casings from sausages and add to a large oiled pot on medium heat. Break apart and cook until browned. Remove from pot and set aside.
  2. In the same pot add your onions and saute for a couple minutes before adding the garlic. Cook until soft and fragrant.
  3. Add the crushed tomatoes, tomato paste, and chopped fresh herbs. Mix and stir for a couple minutes until heated through.
  4. Add in the chicken broth and bring to a boil. Once boiling add the tortellini and cook for 2 minutes less than package time.
  5. Turn heat to low and add the cream and mix in. Once combined add the cooked sausage, spinach, parmesan, and seasonings. Adjust the soup to your taste preference here.
  6. Plate with more parmesan and fresh herbs on top, enjoy!!
