Cajun chicken pasta has always warmed my heart, and brought my family together for a comforting meal. This dish features tender pasta in a cream sauce, warm spices, tender chicken, with sautéed bell pepper and onion. This dish is sure to be a family favourite.
Info and tips
When I make this dish I like to chop up the onions and peppers quite small. I find it helps make the sauce much smoother. However, if you prefer it to be chunkier feel free to chop the veggies to your liking!
One of my most favourite tips to give for cooking chicken, it to always cover it and let it rest. This makes the chicken super juicy every time. I always use a plate and tin foil to cover the chicken.
I also like to reserve a little bit of pasta water to thin out the sauce towards the end if needed!
Ingredients
- 1 small onion
- 4 garlic cloves
- red bell pepper
- 1 smoked sausage
- 2 chicken breast
- tbsp tomato paste
- 2 cups heavy cream
- parmesan
- handful grape tomatoes
- handful spinach
- salt
- pepper
- smoked paprika
- cajun seasoning
- chili flakes
- squeeze of lemon
- parsley
Instructions
- Begin by mincing your garlic and small dicing the onion and red pepper. Set aside for later.
- Cut the sausage into bite size pieces. Prepare the chicken by slicing in half to make 4 thin cutlets. Rub in cajun seasoning and oil.
- Cook chicken for 2-4 minutes each side or until cooked through. Remove and cover. Meanwhile begin cooking your pasta.
- Add the sausage to the same pan and brown it for a few minutes. Remove and set aside.
- Add the onion, red pepper, and garlic to the same pan. Cook down until soft. Add in tomato paste and mix.
- Add in heavy cream and bring to a simmer. Season the sauce to your liking with listed seasonings.
- Add in grape tomatoes, spinach, and parmesan to the sauce. Once mixed, add the cooked pasta, sausage, and chicken breast and stir to combine.
- Top with fresh lemon, parsely, and more parmesan. Enjoy <3
