Apple Cider Caramel Cookies

Apple cider caramel cookies are soft and chewy, filled with warming spices and notes of apple, and drizzled with a buttery cider spiced caramel. These cookies are perfect for fall or winter festivities, and will make your house smell divine!

Info and tips for apple cider caramel cookies

I have made a separate post for how to make the Apple Cider Caramel so make sure to check that out prior! The caramel topping is optional but I highly highly recommend for even more apple cider flavour.

Here are some of my favourite cookie tips for the best soft and chewy cookies that still have those crispy edges:

  • Room temp butter: using room temperature butter helps cream the fat and sugar together, essentially trapping air in the dough. This process is what gives you lighter, fluffier cookies.
  • Chill the cookie dough: I know it sucks but it really does work. Chilling the cookie dough helps increase chewiness, develop the flavour, and helps them spread less.
  • Slightly under bake: I like to pull the cookies out of the oven when the edges are set but the center still looks soft. Then I leave them on the trap until they are sturdy enough to remove to a wire rack. This guarantees soft cookies every single time.

Ingredients for apple cider caramel cookies

  • 4 cups apple cider reduced to Β½ cup
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • Β½ cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 tsp vanilla
  • 3 cups AP flour
  • 1 tsp baking soda
  • ΒΌ tsp baking powder
  • Β½ tsp salt
  • 1 tsp cinnamon
  • ΒΌ tsp nutmeg
  • ΒΌ tsp allspice

Sugar coating

  • ΒΌ cup granulated sugar
  • Β½ tsp cinnamon
  • Pinch nutmeg

Instructions

  1. Begin by reducing the apple cider. Bring the apple cider to a simmer, then turn the heat to low. Stir occasionally until it has reduced to about 1/2 a cup, it will take 2-3 hours. Once cool it will turn into a caramel texture.
  2. In a large bowl or stand mixer beat the softened butter, brown sugar, and granulated sugar for 2-3 minutes until light and fluffy.
  3. Add the egg, egg yolk, vanilla, and a 1/4 cup of the cooled apple cider reduction (the other 1/4 cup is for the Apple Cider Caramel, I’ve written in a separate post). Mix until combined.
  4. In a separate bowl whisk the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and all spice together.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.Β 
  6. Chill the dough for at least an hour.Β 
  7. Preheat the oven to 350F.
  8. In a small bowl mix the sugar coating. Form the dough into even sized balls (about 1 Β½ tbsp each) and coat generously in the spiced sugar.
  9. Bake for 9-11 minutes. Edges should look set while centers look slightly underbaked. Let cool on the pan for 5 minutes then transfer to a wire rack. Top with the apple cider caramel and some flakey salt.
