Starbucks copycat egg bites are the first recipe for my meal prep series! A meal prep series is probably my most common request so I’m super excited to start creating recipes for it! This recipe features custardy, high-protein egg bites loaded with gruyรจre, parmesan, and smoky bacon.
Info and tips for starbucks copycat egg bites
Depending on the texture you prefer, you can cook these egg bites at either 300F or 350F. The 300F is low and slow, and will give you softer, more custardy egg bites. The 350F is a bit quicker at a higher heat, and will give a firmer texture. I also cook the eggs with a water bath, which helps steam the eggs for an even smoother texture.
Blending with a blender will give you the smoothest consistency, although you can also mix by hand. Make sure you hand shred high quality cheese, it adds so much flavour. If you want even more smokey flavour, I’ve used smoked gouda in this recipe instead of the gruyere and it tasted amazing!
Let the egg bites fully cool before placing in a plastic bag or airtight container. Refrigerate for 4-5 days or store in the freezer for 2 months. Reheat in the oven or microwave for a quick and easy breakfast!

- 4 slices of cooked bacon chopped
- 6 eggs
- 1 cup cottage cheese
- 1 cup shredded gruyere
- ยผ cup of shredded parmesan
- ยผ tsp salt
- ยผ tsp pepper
Instructions
- Preheat oven to 350F or 300F depending on your texture preference for the egg bites. Tip: for extra custardy eggs, bake with a water bath on the lower rack.
- Begin by frying the bacon until crispy on both sides. Remove and let cool on a paper towel lined plate.
- Blend the eggs, cottage cheese, salt, and pepper in a blender for about 30 seconds until smooth.
- Pour the blended eggs in into a bowl and stir in the gruyere and parmesan.
- Pour batter into greased muffin tins, filling each tin about 3/4 of the way.
- Bake at 350F for 20-25 minutes for firmer eggs, or 300F for 25-30 minutes for smoother eggs.
- Remove and let cool before removing. Refrigerate for 4-5 days or store in the freezer for 2 months. Enjoy!
