Grilled Reuben sandwich is one of my favourites for summer, especially with a side of chips and pickles. This recipe features corned beef, Swiss cheese, sauerkraut, and a tangy Russian dressing between two slices of golden grilled rye bread.
Info and tips for grilled Reuben sandwich
The homemade Russian dressing is very tangy with a slight kick of spice from the garlic chili sauce. If you prefer to have your Russian dressing more on the sweet side, the you can sub out the garlic chili sauce for ketchup! Traditionally the Reuben usually gets served on rye bread but this sandwich is delicious on any bread you have on hand.
Frying the corned beef for about 30 seconds each side helps warm it up and also get a little charr on it. You don’t have to do this step, but it definitely improves the sandwich!

Ingredients for grilled Reuben sandwich
- 200g corned beef
- tbsp butter
- 2 slices rye bread
- 4 slices Swiss cheese
- sauerkraut (as much as you’d like)
- 1/4 cup mayo
- tbsp chili garlic sauce
- tbsp lemon juice
- tbsp Worcestershire sauce
- tsp horseradish
- tsp paprika
- salt & pepper to taste
- chips & pickles (for serving)
Instructions
- Start by mixing together the mayo, chili garlic sauce, lemon juice, Worcestershire sauce, horseradish, paprika, and salt & pepper together to make the Russian dressing.
- Next fry the corned beef for 30 seconds each side with some butter in a pan on medium heat. Remove the beef and set aside.
- Either use butter or mayo to spread across the bread slices and add spread side down to the pan. Add a layer of Russian dressing, the corned beef, Swiss cheese, and sauerkraut.
- Fold the slices together and press down. Grill until golden and melty on both sides.
- Remove and serve with chips and pickles if desired and enjoy!
