Easy homemade artisan bread is the first episode in my Skip The store Series. I have been wanting to create recipes that teach you how to make things you normally buy from the store. This recipe has a crisp crust and soft, airy centerβ€”and it comes together with no kneading required.

Info and tips for easy homemade artisan bread

No knead bread relies on time to develop the gluten rather than kneading. It ferments slowly which gives you that chewy airy structure that is full of flavour. The longer you rest it, the better the flavour and texture. Overnight is best if you have the time.

This dough is very wet and sticky, so don’t panic and add more flour! The hydration is what is going to create that fluffy and open crumb! I also really recommend using parchment paper to transfer the dough in and out of the dutch oven. It prevents it from sticking and makes for a much easier experience.

Equipment

This is the Le Creuset Dutch Oven I use. They last a lifetime and are definitely worth the investment.

Ingredients for easy homemade artisan bread

  • 3 cups AP or bread flour
  • 1 Β½ tsp kosher salt
  • 2 tsp instant yeast
  • 1Β Β½ cups warm water (not hot)

Instructions

  1. In a large bowl, combine the flour, salt, and yeast. Pour in the warm water and stir until a sticky dough forms. It won’t be kneadable.
  2. Cover the bowl with plastic wrap or a clean towel and let it rise in a warm spot for 2-3 hours until doubled in size and bubbly.
  3. Place a Dutch oven with the lid on into your oven and preheat to 450Β°F (230Β°C) for at least 30 minutes.
  4. Turn the dough out onto a lightly floured surface. Gently shape it into a ball without overworking it. Place the dough on a piece of parchment paper.Β 
  5. Optionally just before baking, dust the dough lightly with flour, then use a sharp knife to make a shallow ΒΌ-inch score. You can try an X, a single slash, or a leaf design!
  6. Carefully transfer the dough (with the parchment) into the hot Dutch oven. Cover and bake for 25-30 minutes. Then remove the lid and bake uncovered for another 10-15 minutes, until golden and crisp.
  7. Let the bread cool on a wire rack for at least 20 minutes before slicing for the best texture.
