Easy creamy gochujang pasta is an easy Korean-inspired pasta made with a rich, spicy sauce and simple ingredients for a quick weeknight dinner. This is the meal I made for my second episode of hikes & bites: the series where I show easy meals you can take along with you for any adventures!

Info and tips for easy creamy gochujang pasta

This recipe can work with any noodle you have on hand! Ramen, udon, spaghetti, or protein pasta all work well, but only cook until just al dente so the noodles don’t get mushy after being tossed in the sauce or after being packed for later. Make sure to top with some fresh greens before serving! You can also add in some shredded chicken, tofu, or fried ground beef!

Gochujang adds a deep, savory heat rather than sharp spice. If you’re sensitive to spice, start with 1 tablespoon and add more to taste. If you love heat, feel free to add chili crisp or red pepper flakes. Peanut butter is used in this recipe which is a great alternative to add creaminess without dairy. You can also use tahini or cashew butter!

Ingredients for easy creamy gochujang pasta

  • 8 oz (225 g) noodles of choice
  • 1-2 tbsp gochujang (depending on spice preference)
  • 2 tbsp soy sauce
  • Β½ tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • Β½ tbsp garlic and ginger paste
  • 1 tbsp peanut butter
  • pasta water as needed
  • green onion for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions until just al dente. Reserve Β½ cup of the pasta water, then drain.
  2. While the pasta cooks, gently whisk together the gochujang, soy sauce, sesame oil, rice vinegar, honey, garlic and ginger paste, and peanut butter in pan over low heat.
  3. Add the cooked noodles to the sauce and mix well, adding pasta water as needed to loosen up the sauce.
  4. Finish with sliced green onions and serve warm, or transfer to a thermos if packing for a hike or outdoor adventure. Enjoy!
