Easy chocolate coconut haystacks are a childhood favourite of mine. They are incredibly soft and chewy and are made without an oven in less than thirty minutes.

Info and tips for easy chocolate coconut haystacks

This recipe doesn’t need an oven, but we will be using the stove. We start by melting sugar, milk, butter, and salt together, continuing to heat it until its begins to simmer. This is going to act like the glue to hold the haystacks together. It needs to simmer for a couple minutes so that when it dries it hardens. You don’t want to simmer longer than two minutes, otherwise your haystacks will be like rocks.

I like to make my haystacks fairly big. You can use spoons to shape them into balls, but I actually found using a 1/4 measuring cup works great to create them. You could also use an ice cream scoop!

Ingredients for easy Chocolate Coconut Haystacks

  • 2 cups white sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • pinch of salt
  • 3 cups rolled oats
  • 1 cup coconut
  • 5 tbsp cocoa

Instructions

  1. Start by adding the sugar, milk, butter, and salt to a sauce pan. Melt on medium heat while stirring occasionally. Bring to a boil for 2 minutes and then shut off the heat.
  2. Meanwhile in a separate bowl mix the rolled oats, coconut, and cocoa until combined.
  3. Pour the wet ingredients over the dry ingredients and fold together.
  4. Immediately form balls and place on parchment paper. Mine made about 15 large haystacks. Let sit for at least 20 minutes to cool and set and enjoy!
