Here are some tips to make your banana cake even better!

  • The riper than bananas the better! The ones with spots will give the cake the sweetest flavour and best texture.
  • Banana cakes can sometimes be quite dense. That’s why it’s so important not to overmix. Once the flour is added, only mix until just combined. This will keep the cake soft and fluffy.
  • Make sure you completely cool the brown butter before adding it to the cream cheese. This will help it blend smoothly.
  • You can store the cake in the fridge for up to five days. I actually prefer to serve it chilled!

Ingredients for Easy Banana Cake

Cake

  • Β½ cup softened butter
  • 1 Β½ cups white sugar
  • 2 large eggs
  • 1 cup sour cream
  • 2 tsp vanilla
  • 2 cups ap flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ΒΌ tsp salt
  • 1 cup mashed bananas
  • skor pieces or nuts for topping

Cream cheese icing

  • 1 block softened cream cheeseΒ 
  • Β½ cup cooled brown butterΒ 
  • 3 cups powdered sugar
  • 1 tsp vanillaΒ 
  • 2 tbsp heavy cream

Instructions

  1. Preheat oven to 350 F. Spray a 9×13 baking dish with some oil.
  2. In a stand mixer cream together the butter and sugar for a few minutes until light and fluffy.
  3. Add the eggs, sour cream, and vanilla. MIx till combined, making sure to scrape down the sides.
  4. Next add the flour, baking soda, cinnamon, and salt. Mix everything until just combined, careful not to overmix (this will make your cake dense).
  5. Gently fold in the mashed banana. Then evenly pour the batter into your baking dish.
  6. Bake for 30-40 minutes until the sides and top are golden, and a toothpick comes out clean. Let cool before icing.
  7. While you wait for the cake to cool make the browned butter. Melt the butter in a light coloured saucepan on medium heat (this makes it easier to see the colour change). Continue stirring the butter. You’ll notice it will begin to foam and start to change to a golden colour after a few minutes. Once you see the colour changing immediately remove from the heat and transfer to a heatsafe bowl so it doesn’t burn. Place the butter in the fridge to cool and set.
  8. Make the icing by beating together the cooled brown butter, and cream cheese. Then add in vanilla, powdered sugar, and heavy cream and mix again until smooth.
  9. Ice the cake and top with fresh sliced bananas and skor pieces. You can also use nuts instead!
