This creamy ravioli is the perfect dish to use up leftover tomatoes. With minimal ingredients, this pasta comes together within 20 minutes, making it the perfect comforting meal for your pasta cravings.

Making your own pasta sauce is actually super simple. I always try to make my own over buying the jarred sauces. You have so much more freedom and control when making your own.
When making this tomato sauce, the tomatoes will break down naturally, and then I will take my spoon and smoosh them down even more. You are welcome to use an emersion blender if you desire the sauce extra creamy.
I added a small slice of Boursin cheese to my sauce at the end to give it a more creamy consistency. Any other similar cheese would work as well, such as cream cheese, ricotta, or you can completely omit the cheese if you’d prefer only a tomatoes.
Ingredients
- 3 garlic cloves
- 4 tomatoes
- handful of cherry tomatoes
- olive oil
- salt & pepper
- red pepper flakes
- oregano
- 1-2 tbsp. butter
- 1/4 cup choice of cheese (I used Boursin)
- 1 package ravioli
- parmesan (to hearts desire)
Instructions
- Begin by mincing the garlic into thin slices, dice your tomatoes and cherry tomatoes. Oil a pan on medium heat, add in garlic and sauté for 1-2 minutes until fragrant.
- Add in both tomatoes and cook down for roughly 10 minutes or until they are soft and easy to break up. Use your spoon to smoosh them further. Meanwhile cook pasta to package instructions.
- Add in listed seasonings to your preferred taste, butter, and choice of cheese. Mix everything together well.
- Add in cooked pasta with a little pasta water if needed. Fold together and top with and top with as much parmesan as you desire. Enjoy!
