Buffalo Chicken Quesadilla With Lime Crema

Buffalo chicken quesadillas with lime crema are one of my favourite easy dinners to make. These have the perfect combination of spicy buffalo, gooey cheese, all packed into a crispy quesadilla, and topped off with a lime crema sauce. If you’re short on time and looking for a crowd favourite, these are perfect!

Info and tips

This dish is super flexible. If you’re extra short on time, shred a rotisserie chicken instead of using chicken breasts. I used cheddar cheese but any type of cheese will work. I like to add sautéed pepper and onion to mine but feel free to switch out with your favourite veggies! Extra pro tip: add a little bit of seasoning salt on top of the quesadilla as soon as they’re done cooking.

I made a lime crema for this recipe, however, ranch or blue cheese would pair great as well!

Ingredients

  • 1/2 onion
  • 2 peppers
  • 3 chicken breasts
  • franks buffalo
  • cheddar cheese
  • tortilla
  • sour cream
  • 1 lime
  • handful cilantro
  • salt & pepper
  • garlic powder
  • onion powder

Instructions

  1. Dice your onion and peppers into fine slices. Prepare the chicken breasts by slicing in half to make 6 thin cutlets, season to liking.
  2. Cook the chicken on a oiled pan until golden and cooked through (a few minutes on each side). Remove and shred. Add enough buffalo sauce to coat the chicken.
  3. Add the onions and red peppers to the same pan and cook until softened, remove and set aside.
  4. Add a tortilla to the same oiled pan. Assemble by placing the shredded buffalo chicken, shredded cheese, sautéed veggies, and cilantro on one half. Fold over and press down. Flip and cook until both sides are golden and crispy.
  5. Make the sauce by combining sour cream, 1 lime juiced, and a handful of chopped cilantro.
  6. Cut and serve the quesadillas with the lime crema and enjoy!
