Strawberry nutella crepe cake is the recipe I finally decided on to celebrate moving into my new home in Calgary. I’ve always loved loved crepes, so it felt right to turn them into a cake. This recipe features delicate layers of thin crepes, stacked with homemade whipped cream, rich Nutella, and fresh strawberries.

Here are some tips to make good crepes:
- Using a non-stick flat pan makes a huge difference for evenly thin, golden crepes. Lightly greasing the pan with butter between every few crepes helps keep things smooth. Remember, your first couple crepes will always turn out not so good, so don’t be hard on yourself. It takes practice to get into the right motion.
- Letting the batter rest in the fridge for at least 30 minutes (or up to overnight) helps the gluten relax, giving you softer, more pliable crepes. Running the batter through a fine mesh strainer will also make it smoother with no lumps.
- Once the cake is assembled, let it chill for at least 2 hours (or even overnight). This helps it set beautifully and makes for cleaner, prettier slices. But I wasn’t able to wait tbh and it still turned out beautifully!
- You can customize the crepe cake to your liking! Swap in some chocolate ganache, mascarpone, or even lemon curd. Any fruit your heart desires can be sandwiched between the layers too.

This is the Crepe Pan I use. It is non-stick and you get perfect even crepes every time.
Ingredients for strawberry nutella crepe cake
Crepes
- ยฝ cup warm water
- 1 cup 2% milk
- 4 large eggs
- ยผ cup melted butter
- 1 cup AP flour
- 2 tbsp granulated sugar
- pinch of salt
Whip Cream
- 1 ยฝย cups heavy cream
- ยฝ cup powdered sugar
- 1 tsp vanilla
Others
- Nutella
- 1 large carton of strawberries
Instructions
- Begin by adding the crepe ingredients to a bowl in the order listed. Mix with a stand mixer or blender until smooth, scraping down the sides as needed.
- If you have a fine mesh strainer, run the batter through it to remove any lumps.
- Heat a flat non-stick pan on medium/low and add a small dollop of butter. Pour about half a ladle of batter onto the pan, and swirl to create a thin layer. Your first couple crepes will most likely not be perfect, so give yourself some grace as you practice this skill.
- Continue making crepes, cooking about 30 seconds per side until you have used all the batter.
- Next use a hand mixer and beat the whip cream, powdered sugar, and vanilla together until you see stiff peaks.
- If you are using strawberries, cut them into thin slices.
- Now assemble your crepe cake by alternating between layers of whip cream and strawberries, and Nutella and strawberries until you have used all your crepes. Finish the top layer off with more whip cream, and a fun little design of strawberries if desired.
- Chill in the fridge for a couple hours if you can wait, then slice into and enjoy!
