When making the strawberry loaf it’s important to cover the strawberries in cornstarch before mixing into the batter. This will help prevent the fruit from sinking to the bottom of your loaf, and also helps the fruit retain its shape and colour. It’s also important not to overmix the batter when adding the dry ingredients to the wet. Mix until just combined to keep the loaf fluffy and tender instead of dense and chewy.
Although it’s tempting, avoid icing the loaf until completely cool. The strawberries also release a lot of moisture into the icing, so if your icing looks a little dry at first, just keep mixing to help release the natural strawberry juices and it’ll thin out.

Loaf
- 1 ยฝ cups flour
- 1 tsp baking powder
- ยผ tsp baking soda
- ยผ tsp salt
- ยฝ cup softened butter
- ยพ cup granulated sugar
- 2 eggs
- โ cup sour cream
- ยผ cup milk
- 1 tsp vanilla
- 1 tsp almond extract
- 1 ยผ cup diced fresh strawberries
- 1 tbsp cornstarch
Glaze
- 1 cup icing sugar
- 1 tsp vanilla
- 1 tbsp heavy cream
- โ cup finely diced strawberries
Instructions
- Preheat oven to 350F.
- Begin by combining the flour, baking powder, baking soda, and salt in a bowl.
- In a separate bowl or stand mixer, cream together the softened butter and sugar until light and fluffy (a couple minutes). Then mix in the eggs one at a time until just combined.
- Next add in the sour cream, milk, vanilla, and almond extract. Mix together until combined, then slowly add the dry ingredients. Do not over mix.
- Combine the diced strawberries with the cornstarch and add them to the batter. Gently fold in.
- Add the batter to a lined loaf pan, and bake for 55-60 minutes or until a toothpick comes out clean.
- Meanwhile combine the strawberry glaze ingredients together in a bowl.
- Once your loaf cools, pour on the glaze and enjoy!
